High-Protein Pumpkin Spice Oatmeal Recipe
A hot, 10-minute breakfast with ~24g+ of protein, cozy fall spices, and pumpkin to keep you full until lunch.
The Power of Pumpkin + Protein + Oats at Breakfast
Rolled oats are a good source of soluble fiber, which slows digestion and helps keep blood sugar steady through the morning. On their own, though, oats are carb-heavy and light on protein, which is why oatmeal can leave you hungry again within an hour or two.
Adding a scoop or two of Nourify® PLUS vanilla protein powder changes that. It brings the bowl up to 10-20g+ of protein, enough to support muscle maintenance and keep hunger in check for several hours. Pairing that protein with the fiber already in the oats and pumpkin means you get a steadier release of energy and avoid a mid-morning crash.
Pumpkin puree adds more than flavor. It's rich in vitamin A and also contributes a bit of extra fiber, all for about 40 calories per serving. Pumpkin pie spice (usually a blend of cinnamon, ginger, nutmeg, and cloves) rounds out the flavor without needing much if any added sugar—a tablespoon of maple syrup is usually plenty.
Tips
- If you like to prep your breakfasts ahead of time, this recipe reheats well, too. Store it in the fridge for up to 3 days and just add a splash of milk when reheating to loosen it back up.
- If you’re using canned pumpkin puree and worry about the unused portion spoiling before you can use it, try dividing it into smaller portions and freezing them separately to use as needed.
- If pumpkin isn't your thing, swap in applesauce and use cinnamon to flavor (or stick with pumpkin pie spice).
